Baking Tips

Using an infrared thermometer, check the temperature of the stone before baking and throughout. Adjust temperature accordingly.
For best results lightly top pizzas.
Rotate pizza at least once during baking.
If the crust is baked yet the top is not done use a metal peel (do not use a wood peel for this) to lift the pizza so that it is directly under the dome of the oven. This is similar to using the broil function in an oven to quickly finish the top surface.
